Mozart Bakery & Café opened it’s doors in June
2003. The owners, Estelle Matheson and Luigi Guidolin, are a
husband and wife team who are passionate about food. They chose
the Walnut Grove area to build their business because they also
call this area home, a close knit community where they are raising
their teenage sons, Dylan and Jacob.
Luigi has been a foodie his entire life. He started his culinary
career at a young age running his high school cafeteria at VanTech,
then went on to graduate from the Culinary Arts program at Pacific
Vocational Institute. He has worked at various Vancouver restaurants
and catering companies, including the Wedgewood Hotel and Glorious
Foods. Prior to opening Mozart Bakery & Café, Luigi
was the Executive Chef at the Gallery Café and Catering,
in the Vancouver Art Gallery. After 20 years as a Chef, he took
on the challenge of bread making. Luigi fires up the oven at
1:30 every morning, creating all of the hand made artisan breads
before preparing the daily lunch menu.
Estelle attended the Pastry Arts program at Dubrulle French
Culinary School, graduating at the top of her class in 1997.
She has worked as the Pastry Chef at the Gallery Café
& Catering, then Head Pastry Chef at Newlands Golf &
Country Club. Estelle was a Chef Instructor at the Cook School
in Vancouver, teaching classes on French pastries, wedding cakes
and gingerbread houses. She is passionate about music, art and
food. Estelle believes that food can be art, and this is reflected
in her work, most notably in her custom wedding cakes. Her love
of music is evident throughout the shop, from the eclectic mix
of songs on the sound system, to pastries named after composers.
Estelle and Luigi are also deeply committed to being socially
responsible. They believe that we are all part of a global village,
and try at all times to make ethical choices, both in business
and in their personal lives. They purchase fair trade products
whenever possible, and are involved in various events such as
Dining Out For Life, which raises funds to benefit people in
the lower mainland living with HIV/AIDS. Please
see the links page for more information
on how you too can get involved. |
